Of chefs employed in the UK hospitality industry, one-quarter come from other EU countries, according to a report by KPMG for the British Hospitality Association. That is a sobering thought, given the exodus of foreign nationals that may occur after Brexit. The industry may well find itself facing the same problem the armed forces do now, competing for the same citizens but cut off from the global talent pool.
